My Food Journey

Several years ago I started to develop constant heart burn, upset stomach and indigestion. I went to the doctor and no one could tell me what was wrong. It got to the point that my stomach hurt for 3 weeks straight. I knew it was time to take matters into my own hands. A couple family members could not eat gluten so I decided I probably should do an elimination diet. I eliminated dairy, eggs, gluten, legumes, soy and nuts. I did this for about 3 weeks and started to feel better. Then it was time to add the foods back in one by one. The first thing I added was dairy. I had an immediate reaction and thought "That's it! I have solved the problem". Well...I still had random and unexplained stomach issues. I kept thinking I was eating hidden dairy. It took me probably another good year to realize that gluten was also a problem. So I'm gluten and dairy free now. I find that I can tolerate a little dairy from time to time but I only eat it on a rare occasion because I don't want to cause any unnecessary inflammation in my body. Trust me, I feel so much better when I don't eat them. With that being said, most of my recipes will be gluten and dairy free. Of course, you may add these in at your leisure! They will be delicious either way.
