Fresh Corn with a Southwest Kick

I have a variety of peppers in my garden right now. I had recently picked up several different plants that I’ve never grow before. Hot banana peppers were the first to produce and has a great yield. I’ve never cooked with these peppers so I wasn’t sure what to make.

On my weekly trip to the grocery store, I saw corn on the cob was on sale for 1 cent each. Who can resist that price? So I bought the limit of 6 and immediately thought how sweet corn could go great with my hot banana peppers. 

So here is a simple, yet delicious side dish that I think will go great with a rotisserie chicken and a starch of your choice. I hope you enjoy it as much as I did.
