Does anyone remember the Chevy’s Fresh Mex restaurants? I loved their food and was so sad when they closed. Luckily, someone bought me their cookbook as a Christmas present. So now I get to share their recipe and show you how it can be modified gluten free. You can make fajita’s, taco’s, a burrito or just serve with a side of beans and rice. Either way, it will be delicious!
