Golden Beets with Goat’s Cheese and Almonds

Only 4 Ingredients!!

It seems that people either love or hate beets. They definitely can have a “taste of the earth” flavor. I personally think they’re great when accompanied with the right ingredients and golden beets tend to have a milder taste than red beets.

The key to this recipe is adding some acid with a vinaigrette which makes a great accompaniment to the beets. I was recently introduced to an amazing calorie free, Italian dressing made by Walden Farms (link below). I had seen it in the stores and was very skeptical. How can calorie free dressing taste good? I declined to even consider buying it then went for dinner at my mother-in-law’s and she had a bottle. She used it on a very similar recipe and I was shocked how good it was. It goes particularly well with this recipe because it’s balance with the fat from the goat’s cheese. The dressing also goes well with salad containing avocado. Yum!

The goat’s cheese imparts a nice tangy flavor and the almonds are the finishing touch. So overall you get a  sweet, tangy, tart and nutty finish to each bite. I hope you get to try it and enjoy!
